Sometimes the mass-produced chocolate that we're used to just isn't enough, and something a little richer and more luxurious is needed, and that's why God invented gourmet chocolate!!

Gourmet chocolate makers will all have their own special way of creating their chocolates, and will have certain favorite ingredients. But in general the two preferred types of gourmet chocolates are those with ganache centers, which means that they are filled with a thick cream, or the less traditional but equally delicious nut and caramel hearts. The popularity of fruit cream and fruit-flavored liquor centers is falling, but there are still some very good varieties on the market if that is what you are looking for.

The art of covering the chocolate is equally important for gourmet chocolatiers. Simply melting the chocolate can leave it looking slightly dull, so a method known as tempering is used to create a perfectly smooth and glossy couverture. Tempering is when the chocolate is repeatedly heated and cooled, and this is why good chocolate 'snaps' rather than just breaking like regular chocolate tends to do.

Apart from its superior taste, luxury chocolate has a major advantage over mass-produced, bars of milk chocolate. It is actually good for you! It may be hard to believe, but premium dark chocolate contains high levels of chemicals known as 'phenolics'. These antioxidants, which are also found in red wine and some fruit and vegetables, are known to break-down fatty substances like cholesterol in the bloodstream, thereby helping to reduce the risk of heart disease and other heart-related illnesses. In addition to this, scientists have found that cocoa in your diet can help reduce stress, and that it is also a valuable source of beneficial minerals like copper, iron and magnesium.

Whilst it is true that eating chocolate can be good for you, there are a few things people might try to tell you about chocolate that you shouldn't necessarily believe.

CHOCOLATE MYTHS

1. Chocolate is addictive

WRONG! So-called chocoholics probably suffer from extreme chocolate cravings due to a food intolerance, and not because chocolate is addictive. Scientists have carried out extensive research on this subject, but to this day have found no evidence to validate the theory.

2. Chocolate gives you acne

WRONG! Whilst too much of any type of food is not good for you as it means you are not getting a full and varied diet, experts such as the American Dietetic Association have found no relationship between eating chocolate and the development of acne.

3. Many people are allergic to chocolate

WRONG! Chocolates may contain other ingredients that can bring out allergic reactions, including foods such as milk, gluten and nuts, but very few people are actually allergic to the chocolate itself.

4. Chocolate is a major trigger of migraines

WRONG! Controlled scientific studies suggest that chocolate is a triggering factor in less than five percent of migraine sufferers. Often it is another ingredient, or one of the naturally occurring chemicals within the chocolate that brings on the migraine.
